Which job's crystal shard was initially un-obtainable in FFV, when could it be obtained (what vehicle was required and in what world and place could it be found), and who had to be fought there in order to earn it.

Ahhh nice easy one then.
The crystal which was un-obtainable was the Mimic Job. I still remember when I first played I kept thinking I had done something wrong and that's why I couldn't get the crystal shard. You were able to get the shard when the two worlds combined to form one and you needed the submarine to go down into the Sunken Water Tower (can't even remember the proper name for that) and you had to fight Gogo (is that it? well something close to that anyway) for it.

Yup Goto you're correct.
Hehe I never liked using it because all my characters had the "Strikeback" or "Counter" Reaction ability equipped. And then one time I forgot one of my offensive characters had Counter... so I took out my White Mage.
Anyway your question.

Lucky guess, I couldn't remember whether it taught Cura, I just knew that it healed when you attacked, and I figured that was probably the 'super evil' thing you meant.

Ooh, I used a fair bit of Palidor briefly. It taught Haste and Slow at 20x, Haste2 and Slow2 at 2x, and... errr... something at 5x. It was Stop, or Float, or Warp, or something like that.
Great for learning a few supporting spells quickly, especially Haste2.
