I use XP Pro.
Another advantage of it is when it comes to networking. I needed to get Pro for my laptop at least, otherwise I couldn't use the wireless network at my school.
Heard good things about Linux, but it just seems like too much effort to learn how to use it. And a lot more troubleshooting to get other programs working.

Encryption is pretty easy to do, though, if you have the right software. Or do you need some other kind of encryption?
