Hard choice between Full Metal Alchemist and Azumanga Daioh. 
Well I haven't watched many... so the list is short.

Hmmm, theres alot more that i need to see, ive got alot of Naruto lying around somewhere that i really should watch.
I have 6/10 from the list Cres has, i must be watching some of the right stuff

Oh! Trigun! I'd completely forgotten about that :O
I've only seen a few episodes, but that was a pretty good anime too

I'd noticed the topic, I'm just never good at ranking anything... ever. So I'll just list a few I like.
Bleach would probably be my top one, although I still haven't gotten to see about half of what has been released. FMA is of course a classic (ha, take that, Rat), and if I'd watched it more recently would probably be about equal with Bleach. I've only seen a dozen or so episodes each of Inu and Kenshin, from what I've seen they're good but not great, I'm told they get better later on though. I've been watching and quite enjoying Naruto recently, although it doesn't compare with my top favourites. It's good though, and it doesn't take itself too seriously. Watched and enjoyed GTO a while ago, which is quite different from the kind of stuff I normally watch. Full Metal Panic series 1 and 2 were very good, still haven't watched series 3. While series 2 was definitely more funny than the first, I'd have to say I prefer series one because it actually had a point to it.
Going back quite a while, Trigun, Hellsing, .Hack in general, Nadesico and Eva were all good. Chobits I didn't like as much, found it a bit dull at times. What I've seen of Excel Saga was good, although the formula was beginning to get a little tired. There's quite a few series that I started watching but never got around to finishing, such as Bubblegum Crisis Tokyo 2040, Outlaw Star, Crest of the Stars, RahXephon, Love Hina, Azumanga Daioh (only one episode, didn't like it too much) and so on. A few names slip the mind and I'm sure there's plenty of others I've forgotten about, but most of the main ones are probably there.
EDIT: Oh, the Read or Die OAV was great, too. 'Miss Deep' still sounds like a porn star's name, though.
