When I saw this for some reason I thought of a cloud (or a cloud's shadow) for some reason, even though I doubt it is right.

Up a hill, - The shadow moves up and down hills while the cloud moves.
Down a hill, -^
Over them I may roam, - They may do this, but only when the sun is out.
But after all my walking, - Even so,
There's no place like my own. - The cloud does not come out of the sky.

It doesn't sound right, but I like it.

Simply home. You're wandering around everywhere, but no matter what you'll always miss your own place, which is your home.

This thing is a most amazing thing.
For it can be both as sharp as a knife,
Or as flat as a floor.

A mysterious shadow lurks around here.

Geez, that could be tonnes of things. I am going to say plants. You can have a flat layer of moss, but also a cactus spike. And they occur naturally.

Ferret had already got it though. I will explain anyway.

Deep, deep, do they go. - Roots grow down.
Spreading out as they go. - Roots spread out to get the full benefits of the ground's nutrients.
Never needing any air. - Air is supplied by the plant.
They are sometimes as fine as hair. - Roots can be very thin.

Oh Lord! I am not worthy!
I bend my limbs to the ground.

Weeping Willow? The limbs of the tree reach the groumd and the tree itself is usually located near a river or a large body of water. The tree does in fact not weep nor does it make a sound (cept in Pocahontas) so the answer is weeping willow?
